On the eve of an epic pig roast at a friend's house, we decided to dig through one of our latest cookbooks (Thug Kitchen) and picked out a recipe that included everything but meat. The entire book is vegan, so there were plenty of options to choose from and and the winner was roasted beer and lime cauliflower tacos topped with cilantro coleslaw, sliced avocado, and salsa.
Making these tacos was very simple - first we simmered the cauliflower in the beer, vegetable broth, and soy sauce, then tossed them with onions and spices before roasting them in the oven for about 20 minutes. We then made the coleslaw out of chopped cabbage, carrots, cilantro and oil+vinegar. Although it also called for a homemade salsa recipe, we just got lazy and used prepared salsa. Then it's all thrown together with corn tortillas and sliced avocado - delicious.
The cookbook uses very colorful language, which makes for both an entertaining and tasty food experience - we highly recommend having it on hand for when you're not in the mood for meat:
