Shrimp Curry with Coconut Rice


One of our latest dinners was a Shrimp Curry with Coconut Rice from Cookinglight.com:

Although the shrimp we find here in NYC will never compare to real North Carolina shrimp (the Garrisons know) this meal turned out pretty well nonetheless, and I would strongly recommend anyone with access to said worthy shrimp to try it!

It is pretty quick and easy (only takes about 20-30 minutes- very limited chopping involved, yay!), and has a lot of great flavor. We chose to make “boil in a bag  rice” which Julia had never actually heard of before, but would recommend using regular instant rice, as the bag may have prevented some of the coconut flavor from coming through.



The final product- colorful and tasty!
